- French bread (or ciabatta or facoccia bread)
- 2-3 T. olive oil
- 1 can tomatoes or 1 pint cherry or grape tomatoes, diced
- 1 T. olive oil
- Basil
- 1 t. salt
- Baby spinach
- Grated mozzarella cheese
- Parmesan
- Black olives
Slice bread and fry in 2-3 T. of olive oil, adding oil as needed. Rub a clove of garlic on bread. Layer spinach, tomatoes, cheeses, and olives. Toast in toaster oven to melt cheese.
